Wholewheat spaghetti with feta and maca pesto

Maca is a superfood loaded with iron that naturally boosts the immune system, and it’s delicious in this wholewheat spaghetti with feta and maca pesto.

SERVES 2 // COOKING TIME 35 min

INGREDIENTS
100 g wholewheat spaghetti
2 tbsp olive oil, plus extra to drizzle
1 avocado, sliced
1 wheel feta, plus extra to serve
¼ cup rocket
¼ cucumber, sliced
3 tbsp basil pesto
¼ lemon, juiced
1 tbsp maca powder
Pinch salt
Handful pine nuts, toasted
15 g basil

METHOD
1. Cook pasta in salted water, drain and drizzle with oil.
2. In a food processor, blend together the avocado, feta, rocket, cucumber, pesto, lemon juice, maca powder and salt.
3. Stir the sauce through the spaghetti.
4. Serve topped with pine nuts, crumbled feta, basil and a drizzle of olive oil.
