A clafoutis is like a pancake and soufflé all in one. It’s sweet but not overbearing and the fruit (in this case, mixed berries) will melt in your mouth!

INGREDIENTS
⅔ cup milk
⅔ cup cream
1 cinnamon stick
1 tsp vanilla essence
4 eggs
½ cup castor sugar
¼ cup flour
300 g frozen mixed berries
2 tsp icing sugar
4 scoops vanilla ice cream, to serve
METHOD
1. Preheat the oven to 200C. Grease a 1.5-litre ovenproof dish.
2. Combine the milk, cream, cinnamon and vanilla in a pot. Bring to the boil over medium heat. Remove from the heat and discard the cinnamon stick.
3. Whisk together the eggs and sugar in a bowl until light and frothy. Whisk in the flour, then gradually pour in the warmed cream mixture, whisking constantly as you pour.
4. Sprinkle the berries into the prepared dish. Pour the cream mixture over the berries. Bake the clafoutis for 35 min or until lightly golden and set.
5. Dust the clafoutis with sifted icing sugar and serve warm with ice cream.
Quick Tip: Add the zest of one lemon to the clafoutis mixture for a fresh flavour boost.
