Boerie with broccoli rice and corn ketchup

Light up the fire and treat the fam to this ultimate boerie with broccoli rice and corn ketchup. You only need to take a peak inside your pantry for all the ingredients.

SERVES 4 // COOKING TIME 40 min

INGREDIENTS
For the corn ketchup
3 tbsp vegetable oil
½ onion, sliced
2 garlic cloves, grated
1 tsp dried mixed herbs
¾ cup milk
2 tbsp Dijon mustard
4 mielies, cooked and removed from the cob,
For the broccoli rice
1 broccoli, grated
2 cups brown rice, cooked
500 g boerewors, cooked

METHOD
For the corn ketchup
1. Heat the oil in a pan over low-medium heat. Add the onion and gently fry for 5 minutes.
2. Add the garlic and mixed herbs and cook for 5 minutes.
3. Turn the heat down to low and add the milk, mustard and mielies. Cook, stirring, until heated through.
4. Transfer to a food processor and blend until smooth. Season.
For the broccoli rice
1. Mix 2 cups broccoli with the hot rice and season to taste. Reserve the rest of the broccoli for the broccoli-corn salsa.
2. Serve the broccoli rice with the boerewors and corn ketchup.
