Heat up the oven and get to cooking this tomato bruschetta! They’re a great light snack and can be added to a starter platter for a dinner party too.
SERVES 6 // COOKING TIME 35 min
INGREDIENTS
1 baguette, sliced diagonally
2 cloves garlic, peeled and chopped
Salt and pepper
3 tbsp olive oil
200 g rosa tomatoes
4 sprigs thyme
100 g cream cheese/cottage cheese
Handful basil
METHOD
1. Preheat oven to 180°C.
2. Place the baguette slices on a baking tray. Sprinkle with the garlic, season and drizzle with 2 tbsp oil. Bake for 10–15 minutes, until crisp.
3. Place the remaining 1 tbsp oil, the tomatoes, 1 tsp salt, ½ tsp pepper and thyme in a pan over high heat. Fry until the tomatoes are soft.
4. To assemble, spread some cream cheese/cottage cheese on each slice of bruschetta, spoon some tomato mixture on top and scatter with some basil.
