Tex-Mex burgers

Heat up the fire – it’s time to cook up these Tex-Mex burgers for a spicy treat! They’re the perfect way to spend National Braai Day tomorrow


For the corn relish
2 tbsp vegetable oil
1 onion, finely chopped
400 g tin sweetcorn
2 tbsp white vinegar
1 tsp mustard
1 tsp garlic powder
1 tsp sugar
1 tsp salt
½ tsp cayenne pepper
½ cup cream
¾ cup milk
To assemble
4 hamburger buns, sliced and toasted
1 avocado, mashed
4 beef patties, braaied
2 gherkins, sliced
2 jalapeños, sliced

For the corn relish
1. Heat the oil and fry the onion until golden.
2. Add all the remaining ingredients, except the milk and cream. Fry for 10 minutes, until fragrant.
3. Add the cream and simmer for 10 minutes. Leave to cool.
4. Blend with the milk until smooth. Pass through a sieve, if desired.
To assemble
1. Spread avo on a bun and top with a burger patty. Add corn relish and garnish with gherkins and chillies.
