Can’t choose between your favourite desserts? You don’t have to! Let your imagination take hold with this delicious giant cookie cake.
SERVES 12 // COOKING TIME 45 min
INGREDIENTS
180 g unsalted butter
1 cup packed brown sugar
2 eggs
2 tsp vanilla essence
2 cups flour
1 tsp bicarbonate of soda
½ tsp salt
1 cup chocolate chips
METHOD
1. Preheat oven to 180°C and grease a cake tin.
2. In a bowl, cream the butter and sugar. Mix in the eggs and vanilla until well combined. In another bowl, mix flour, bicarb and salt. Add the dry to the wet ingredients, and mix gently until dough is thick and sticky. Fold in ¾ cup chocolate chips.
3. Transfer the dough to the cake tin, smoothing the top with the back of a spoon. Sprinkle with the remaining chocolate chips.
4. Bake for 25 minutes, until the cake is golden brown around the edges. Then cover with foil and bake for a further 10 minutes.
