With the holidays here, it’s the perfect opportunity to gather the family and enjoy an oat breakfast bake with honey and berries!
SERVES 6 // COOKING TIME 55 min
INGREDIENTS
For the oat breakfast bake
1½ cups milk
½ cup yoghurt
2 eggs
¼ cup honey
1 tbsp butter
2 tsp vanilla essence
1¾ cups oats
1 tsp baking powder
¼ tsp salt
1 tsp cinnamon
¼ tsp mixed spice
2 tbsp brown sugar
1 apple, grated
2 cups mixed frozen berries, defrosted
For the honey-berry topping
⅓ cup oats
2 tbsp flour
½ tsp cinnamon
1 tbsp sugar
⅓ cup flaked almonds
3 tbsp butter
METHOD
For the oat breakfast bake
1. Preheat oven to 180°C. Grease a large oven dish.
2. Mix together the milk, yoghurt, eggs, honey, butter and vanilla.
3. In a separate bowl, mix together the oats, baking powder, salt, spices and sugar. Add the apple and 1½ cups of the berries and mix.
4. Stir the milk mixture into the oat mixture and pour into the prepared dish. Scatter over the grated apple and berries.
5. Bake for 20 minutes.
For the honey-berry topping
1. Rub together all the ingredients until it resembles a crumble.
2. Sprinkle over the oats and bake for 20 minutes.
3. Serve topped with extra honey and some fresh mint.
