Kick-start your day with a yummy dose of healthy ingredients in this wholesome coconut baked eggs recipe!
SERVES 2 // COOKING TIME 25 min
INGREDIENTS
1 tsp olive oil
2 eggs
¼ cup coconut milk
¼ cup low-fat milk
Zest and juice of 1 lime
Salt and black pepper
½ tsp jalapeño Tabasco sauce
2 tbsp coconut shavings, toasted
Handful coriander, to garnish
METHOD
1. Preheat oven to 200°C.
2. Brush 2 ramekins with oil and crack an egg into each one.
3. Mix the coconut milk, milk and lime juice and pour over each egg. Bake for 10 minutes.
4. Remove from the oven. Season, drizzle with Tabasco and garnish with coconut, lime zest and coriander.
