Cheat’s hummus and bacon club sandwiches

Are you looking for a cheap lunch option the whole family will enjoy?

SERVES 4 // COOKING TIMES 15 mins

INGREDIENTS
250g shoulder bacon
5 tbsp vegetable oil
2 chicken breasts
250g dried chickpeas, cooked according to packet instructions
¼ cup peanut butter
Salt and pepper
12 slices of white bread
½ iceberg lettuce, shredded
2 tomatoes, sliced
150g gherkins, ½ sliced, ½ left whole

METHOD
1. Preheat oven to 180°C.
2. Place bacon on a wire rack and grill until crisp.
3. Heat 1 tbsp oil in a small pan and fry the chicken for 3 minutes on each side.
4. Using a food processor, blend the chickpeas with the remaining oil and the peanut butter. Season.
5. Heat a griddle pan and toast the bread.
6. Assemble the sandwiches using 3 slices of toast each,layering the fillings as follows: toast, hummus, bacon, sliced gherkins, toast, hummus, tomatoes, chicken, lettuce, toast. Slice each sandwich diagonally and secure with a skewer.
7. Serve with extra hummus and whole gherkins.
