In need of a quick lunch? This cannellini bean and chorizo salad is the perfect easy meal that you can whip up in a flash. We also love it because you can enjoy it chilled or warm, depending on the weather.
SERVES 2 // COOKING TIME 20 min
INGREDIENTS
30 g chorizo, sliced
1 red onion, cut into wedges
2 tins cannellini beans
3 tbsp parsley, chopped
3 tbsp red wine vinegar
3 tbsp olive oil
METHOD
1. Fry the chorizo. Char onion in a hot pan then toss together chorizo, onion and beans.
2. Whisk together the parsley, vinegar and oil until emulsified. Pour over the salad.
TIP: Chorizo not your thing? You can swap it out for salami as a more budget-friendly option!
