Puffed rice granola

Need to change things up for brekkie? You can make your own puffed rice granola in a flash, and on a budget. Enjoy it as a cereal with milk or top it with your favourite seasonal fruits and yoghurt.

SERVES 4 // COOKING TIME 10 min

INGREDIENTS
2 cups puffed rice
½ cup sliced almonds, toasted
¼ cup honey
2 tbsp coconut oil
1 cup plain yoghurt
2 kiwis, sliced

METHOD
1. Cook the rice, almonds, honey and coconut oil over a medium heat, stirring occasionally, for 5 minutes.
2. Spread out the mixture on a tray to cool until crisp.
3. Serve with yoghurt and kiwi.
