There could never be a healthier, tastier sandwich than our inventive take on the classic BLT.
SERVES 4 // COOKING TIME 10 min
INGREDIENTS
¼ cup mayonnaise
Zest and juice of 1 lemon
Salt and pepper
8 slices seed loaf
200g shaved turkey breast
1 beetroot, cooked, peeled and sliced
METHOD
1. Mix the mayonnaise with the lemon zest and juice, then season.
2. Spread lemon mayonnaise on each slice of seed loaf. Place turkey on one half of the slices and beetroot on the other half. Close the sandwiches, cut in two and wrap up.
