Yummy rolled croissant sandwich recipe

Rolled croissant sandwich  

Serves 1  

You can use any leftover shredded pork, chicken or beef for this recipe. 

Ingredients 

2 croissants 
2 Tbsp butter 
Glug oil 
2 Tbsp honey, plus extra to serve 
¼ coil chorizo, sliced or 2-3 slices streaky bacon 
2 Tbsp plain cream cheese 
1 Tbsp chopped fresh herbs 
Small handful fresh rocket 
Salt and milled black pepper 
¼ cup grated cheddar or mozzarella 
2 Tbsp tomato chilli jam or onion marmalade 

Method 

  1. On a chopping board, use a rolling pin to flatten croissants to about 2-3cm. 
  2. Heat butter and oil in a pan. 
  3. Fry croissants for 2-3 minutes per side until crispy. Drizzle with honey and fry for another minute. Remove from pan. 
  4. Fry chorizo or bacon in same pan for about 5-6 minutes with an extra glug of oil. Set aside.
  5. Combine cream cheese and fresh herbs. 
  6. Spread cream cheese over one croissant and top with rocket, chorizo or bacon, cheese and jam or marmalade. Top with second croissant. 
  7. Fry sandwich in a clean hot pan for 3-4 minutes or until cheese melts. Drizzle with honey just before serving.
