Vegan burgers

Everyone should know by now that we are massive burger fans at MyKitchen, and we want everyone to be included in this amazing food creation. Enter our spicy vegan burgers topped with creamy avocado.

SERVES 4 // COOKING TIME 15 min

INGREDIENTS
410g tin chickpeas, drained and rinsed
¾ cup chilli bite mix
2 tbsp chopped coriander, plus extra to serve
Salt and cracked black pepper
2 tbsp vegetable oil, to fry
2 avocados, peeled and sliced
4 wholewheat rolls

METHOD
1. Place the chickpeas, chilli bite mix and coriander in a food processor. Season. Pulse to blend. Shape into 8 patties.
2. Heat the vegetable oil in a non-stick frying pan over medium heat. Fry the patties for 3 minutes on each side, until golden brown.
3. Serve 2 patties on each roll, with a few slices of avocado and extra coriander.
