SERVES 2 // COOKING TIME 15 min
2 tins cannellini beans
3 tbsp olive oil
2 slices sourdough, toasted
½ avocado, mashed
1 lemon, zested and juiced
1. Mash the beans with the oil. Season with salt and pepper.
2. Smear bean mash on toast.
3. Add avo and rocket.
4. Sprinkle with lemon zest and juice.
