Shredded chicken and corn waffle tacos

Save time and money by learning to cook delicious dishes with ready-made goods from the grocery store. Grab yourself a pack of toaster waffles to make these chicken and corn waffle tacos.


1 tbsp olive oil, plus to fry
3 chicken breasts
3 tbsp lemon-and-herb spice (optional)
Salt and pepper
Juice of 1 lemon
1 cup corn kernels
¼ cup mayonnaise
2 tbsp chopped coriander
1 cup cherry tomatoes, chopped
8 frozen waffles, toasted

1. Heat a splash of olive oil in a pan. Add the chicken and season it with lemon-and-herb spice, salt and pepper, and lemon juice. Cook for 20 minutes, then set aside to cool.
2. Shred the chicken with a fork. Mix it with ½ cup corn, the mayo and 1 tbsp coriander. Season with salt and pepper.
3. Make a fresh salsa with the remaining corn and coriander, the tomatoes and 1 tbsp olive oil.
4. Sandwich shredded chicken between folded waffles and add a dollop of salsa.
