Egg, avo and tomato rice cake stacks

Are you looking for a wholesome, light brekkie? We love these rice cake stacks because you can just grab them and go, and they are also super easy to whip up at work. All you have to do is boil your eggs in advance!

SERVES 2 // COOKING Time 15 min

INGREDIENTS
2 eggs
4 rice cakes
¼ cup cream cheese
1 avocado, sliced
2 tomatoes, sliced

METHOD
1. Boil your eggs to your liking, but make sure they aren’t too soft.
2. Cut the eggs in half.
3. Spread each rice cake with cream cheese.
4. Top with avocado, tomato and egg.
5. Season with salt, pepper and chilli sauce.
