This steak and lentil salad is perfect for any fitness junkies out there. It’s a tasty lunch or dinner meal you can whip up anytime!
SERVES 2 // COOKING TIME 30 min
INGREDIENTS
1 red onion, cut into wedges
1½ tbsp olive oil
300 g steak, cut into strips
Salt and black pepper
1 apple, cored and cubed
1 cup brown lentils, cooked
METHOD
1. Preheat oven to 200°C.
2. Drizzle the onion with 1 tbsp olive oil and roast for 15–20 minutes, until soft and slightly caramelised.
3. Heat the remaining oil over high heat, season the steak and fry to your liking.
4. Toss all the salad ingredients together and season to taste.
