When you see a recipe for this dish, you might immediately assume that it’s going to be a long process. But this classic dish is so delicious, anyone should be able to make it in a flash. So we created this quick coq au vin recipe just for you!
SERVES 4 // COOKING TIME 1 hour
INGREDIENTS
8 chicken drumsticks
2 stalks celery, diced
2 carrots, diced
2 cloves garlic, crushed
1 onion, diced
150g exotic mushrooms
2 sprigs thyme
2 sprigs rosemary
2 tbsp tomato paste
1½ cups chicken stock
1 cup red wine
150g asparagus
METHOD
1. Heat a little olive oil and brown the chicken. Remove from pan and set aside.
2. In the same pan, add some more oil and fry celery, carrots, garlic and onion for 5–7 minutes.
3. Add mushrooms, thyme, rosemary and tomato paste; fry for 3–5 minutes, until beginning to stick to the bottom of the pan.
4. Deglaze with stock and wine; add chicken. Simmer for 15–20 minutes. Add asparagus for the last 3 minutes.
