Making a snazzy starter or canapé doesn’t have to be a chore. A pastrami Reuben only needs the cheapest and easiest ingredients and they come together in under 20 minutes. Bookmark this recipe for the next time you are having people over.

INGREDIENTS
¼ cup mayonnaise
1 tbsp tomato sauce
Juice of ½ lemon
1 tsp Worcestershire sauce
8 slices rye or sourdough
¼ cup mustard
4 slices pastrami
150g Emmental, grated
½ cup sauerkraut
Butter, to fry
Salt and black pepper
METHOD
1. Preheat oven to 180°C.
2. Combine the mayonnaise, tomato sauce, lemon juice and Worcestershire sauce.
3. Lay out 4 slices of bread and spread with mustard. Top with pastrami, cheese and sauerkraut, and drizzle each with about 1 tsp sauce. Sandwich with remaining bread. Secure with string.
4. Melt the butter in a pan over medium heat. Fry the sandwiches on both sides until bread is golden brown.
5. Place on a baking tray. Bake for 5–10 minutes, until cheese has melted. Season and serve hot with the remaining sauce.
