Christmas-spiced white chocolate overnight French toast

We put a twist on this classic for truly memorable brekkies! Whip up this spiced white chocolate overnight French toast on Christmas Eve for the whole fam to enjoy for breakfast when they wake up.

SERVES 8 // COOKING TIME 1 hour 50 min

1 loaf white bread, unsliced
1 cup raisins
1 cup white chocolate chips
6 eggs
3 cups milk
2 bananas
1 tbsp cinnamon
2 tsp lemon juice
1 tsp ground nutmeg
1 tsp ground ginger
Pinch salt
Honey, to serve
Yoghurt, to serve

1. Grease a 20 × 30 cm baking dish. Cut the bread into large chunks. Place the bread, raisins and chocolate chips in the baking dish, and toss to mix.
2. Blend eggs, milk, bananas, cinnamon, lemon juice, ground nutmeg, ground ginger and salt.
3. Pour the custard over the bread and cover with greased foil.
4. Place another baking dish on top and weigh it down, to ensure the bread soaks up the liquid. Leave to soak in the fridge overnight.
5. Preheat oven to 180°C.
6. Take the dish out of the fridge so that it can come to room temperature (if it’s too cold, it may shatter in the oven). Bake, covered, for 45 minutes.
7. Remove the foil and bake for another 20–25 minutes, until golden.
8. Serve with honey and yoghurt.
