How to make churros at home

As part of the doughnut family, churros have a special place in our hearts! These delicious Mexican treats have gained a lot of popularity recently, but figuring out where to get a great churro can be tough, so you may as well just make them yourself! Here’s how:

1 cup water
125 g butter
5 cm lemon rind
2 cups flour
1 tsp baking powder
3 eggs
Vegetable oil, to deep-fry
¼ cup sugar, plus extra to serve

1. Bring the water, butter and lemon rind to the boil. Reduce the heat to low and remove the lemon rind.
2. Add the flour and baking powder. Stir with a wooden spoon until the mixture comes away cleanly from the sides and forms a ball. Remove from heat.
3. Add eggs and beat until the mixture is thick and smooth. Spoon into a piping bag fitted with a star nozzle.
4. In a large pot, heat enough oil to deep-fry. Squeeze 5 cm long strips of batter into the hot oil and fry in batches, for 2 minutes on each side, until golden. Drain on paper towel.

Sprinkle with cinnamon and serve with ice cream and chocolate sauce to top it off!
