No need to go to a restaurant for prawns when you can make this absolutely incredible grilled prawns with coriander dressing recipe, yourself!
SERVES 6 // COOK TIME 45 mins
INGREDIENTS
2 cloves garlic, crushed
1 red onion, roughly chopped
1 red pepper, deseeded
1 red chilli, chopped
Small piece of lemongrass, grated
Juice of 2 lemons, plus 1 lemon, sliced, to serve
100 g olives
50 g coriander, chopped
10 g mint, chopped
1 k g queen prawns, cleaned
For the dressing
20 g coriander, chopped
1 tbsp apple cider vinegar
Juice of 1 lime
50 ml sesame oil
50 ml olive oil
Salt
METHOD
1. Place the garlic, onion, pepper, chilli, lemongrass, lemon juice, olives, coriander and mint in a food processor, and blend until smooth.
2. Pour into a bowl and mix the prawns in the paste.
3. After 15 minutes, place a griddle pan on high heat and sear the prawns on both sides for one minute or until golden and the tails start to curl.
For the dressing
1. Combine the coriander, vinegar and lime juice.
2. Mix the sesame and olive oils, then slowly add the oil to the lime juice mixture. Season well.
3. Drizzle the dressing over the prawns, then serve with lemon slices on the side.
Top tip: We also recommend you buy prawns that have already been cleaned to save yourself the hassle.
