This mug cake is just as good without the added chocolate. Cook it for 2-3 seconds less for a slightly more molten centre. For a different flavour, replace the chocolate with a spoon of peanut butter, jam, Biscoff- or chocolate spread.

Ingredients
3 Tbsp (40g) sugar
3 Tbsp (15g) cocoa powder
¼ tsp (1.25ml) baking powder
¼ cup (30g) flour
¼ tsp (1.25ml) salt
2 Tbsp (30ml) oil
3 Tbsp (45ml) milk
½ tsp (5ml) vanilla
2 blocks chocolate (or a small handful of chocolate chips)
Ice cream (or whipped cream), to serve
Method
- Place all the ingredients (except for the chocolate) in a mug and use a small whisk or fork to combine well, until glossy and smooth.
- Add chopped chocolate and press into the centre of the mug.
- Microwave for 60 seconds. Carefully remove using a pair of oven gloves, as the mug will be very hot. Allow to cool for 2 minutes before digging in.
- Serve with small scoops of ice cream or whipped cream.
