Chocolate microwave mug cake  

This mug cake is just as good without the added chocolate. Cook it for 2-3 seconds less for a slightly more molten centre. For a different flavour, replace the chocolate with a spoon of peanut butter, jam, Biscoff- or chocolate spread.

 Makes 1  

Ingredients  

3 Tbsp (40g) sugar
3 Tbsp (15g) cocoa powder
¼ tsp (1.25ml) baking powder
¼ cup (30g) flour
¼ tsp (1.25ml) salt
2 Tbsp (30ml) oil
3 Tbsp (45ml) milk
½ tsp (5ml) vanilla
2 blocks chocolate (or a small handful of chocolate chips)
Ice cream (or whipped cream), to serve 

 

Method  

  1. Place all the ingredients (except for the chocolate) in a mug and use a small whisk or fork to combine well, until glossy and smooth.
  2. Add chopped chocolate and press into the centre of the mug.
  3. Microwave for 60 seconds. Carefully remove using a pair of oven gloves, as the mug will be very hot. Allow to cool for 2 minutes before digging in.
  4. Serve with small scoops of ice cream or whipped cream.
