Waking up to leftover pizza in the fridge is great! But have you ever thought of whipping up a fresh one? If so, this breakfast pizza recipe is for you!
SERVES 4
INGREDIENTS
Vegetable oil, to grease
Bread dough / 4 pizza bases
100 ml tomato purée
200 g cheddar, grated
250 g mushrooms, thinly sliced
200 g bacon, chopped and fried
1 onion, peeled and thinly sliced
Salt & black pepper (cracked)

METHOD
1. Preheat oven to 190°C and grease a baking tray with oil.
2. Divide the dough into 4 balls and roll out each one as thinly as possible (skip this part if you are using ready-made pizza bases). Place the pizza bases on the tray.
3. Spread tomato purée on each base and sprinkle with cheese. Arrange the mushrooms, bacon and onion on top. Season. Bake for 15 minutes.
4. Remove from the oven and crack an egg into the centre of each pizza. Bake for 10 minutes, until the eggs are cooked. Serve immediately.
