A hot and festive roast is always a winner! Let the flavours come alive when you prepare this beef prime rib roast with white-wine sauce for the fam.
SERVES 10 // COOKING TIME 1 hour 10 min
INGREDIENTS
For the beef prime rib roast
4-rack prime rib roast
¼ cup olive oil, plus to drizzle
Zest of 1 orange
2 tbsp crushed garlic
2 tbsp brown sugar
1 red chilli, finely sliced
6 rosemary sprigs
For the white-wine sauce
1 cup white wine
2 garlic cloves
Zest and juice of 1 orange
1 cup cream
1 tbsp flour mixed with
2 tbsp water
METHOD
For the beef prime rib roast
1. Preheat oven to 200°C and heat a griddle pan.
2. Season prime rib roast with salt, pepper and some oil. Grill for 2 minutes on each side.
3. Combine ¼ cup oil, orange zest, garlic, sugar and chilli.
4. Place meat in a roasting tin. Rub seasoning mixture over the meat. Arrange rosemary on top.
5. Roast for 30 minutes, spooning the cooking juices over the meat halfway through.
For the white-wine sauce
1. Pour the meat juices, along with the wine, garlic, and orange zest and juice, into a pot. Bring to a simmer and cook until reduced by half.
2. Add cream and flour paste. Whisk to a smooth consistency.
3. To serve, slice the meat along each rib and pour the wine sauce over it.
