Avo and hummus are big favourites! So what better way to enjoy them than together in this healthful avocado and roast cauliflower hummus?
SERVES 4 // COOKING TIME 35 min
INGREDIENTS
75 ml avocado oil
50 ml lemon juice
Salt and pepper
200 g cauliflower, cut into florets
1 clove garlic, peeled and crushed
410 g tin chickpeas, drained, brine reserved
2 tsp ground cumin
1 tsp smoked paprika
3 avocados, peeled and cubed
METHOD
1. Preheat oven to 200°C and line a baking tray with foil.
2. Mix 2 tbsp avo oil and 1 tbsp lemon juice. Season. Add the cauliflower and garlic, and toss to coat.
3. Roast for 20–25 minutes, until just soft. Allow to cool slightly.
4. Place cauliflower, chickpeas, spices, and remaining oil and lemon juice in a food processor. Add about 3 tbsp of the reserved chickpea liquid and blend.
5. Season and add avo. Blend to desired consistency, adding more chickpea liquid if needed.
