If you’re planning on hosting any friends or family over, you’ll definitely need to include this roast red pepper hummus flavoured with paprika to the snack table.
SERVES 4 // COOKING TIME 1 hour 10 min
INGREDIENTS
1 red pepper, sliced
3 tbsp olive oil, plus to drizzle
1 cup tinned chickpeas
Juice of 2 lemons
1 jalapeño, chopped
2 tbsp tahini
2 tsp paprika
1 tsp ground cumin
METHOD
1. Preheat oven to 200°C.
2. Place red pepper on a baking tray and drizzle with olive oil. Roast until soft and slightly browned, about 15 minutes. Remove from the oven and leave to cool.
3. Place all the ingredients in a food processor and blitz until smooth.
