These banana flapjacks are perfect for when you’re trying to cut out refined sugar but still crave a delicious, sweet-tasting breakfast. The combination of bananas, eggs and coconut flour will keep you filled and satisfied without the sugar crash.
SERVES 4 // COOKING TIME 20 mins
INGREDIENTS
3 bananas, sliced, plus extra to serve
5 eggs
2 tbsp coconut flour
¼ tsp baking powder
½ tsp cinnamon
Pinch salt
Oil and butter, to fry
100% organic maple syrup, to serve
METHOD
1. In a bowl, mash the bananas with a fork. Then add the eggs, coconut flour, baking powder, cinnamon and salt. Combine.
2. Heat a bit of oil in a pan and add a tablespoon of batter. Fry for 1–2 minutes until one side is golden brown, then flip on to the other side. Add a knob of butter and fry for 30 seconds to a minute. Repeat until the batter is finished.
3. Stack the flapjacks on a plate and serve with banana slices and a drizzle of maple syrup.
