What better way to end your evening than with this delicious dessert, sticky banana pudding. It’s guaranteed to be a crowd-pleaser!
SERVES 6 // COOK TIME 1 hour 10 min
INGREDIENTS
For the pudding
220 g flour
1 tsp baking powder
1 tsp bicarbonate of soda
Pinch salt
150g white sugar
125 g butter, melted
2 eggs
1 cup mashed bananas (2–3)
2 tbsp lemon juice
1 tsp vanilla essence
For the toffee sauce
250 ml cream
125 g brown sugar
125 ml golden syrup
60 g butter
Pinch salt
METHOD
For the pudding
1. Preheat oven to 180°C. Butter and flour a 20 cm baking dish.
2. In a bowl, whisk flour, baking powder, bicarb and salt.
3. In another bowl, beat sugar and butter. Add eggs, bananas, lemon juice and vanilla.
4. Combine the dry and wet ingredients (don’t overmix).
5. Pour into the dish and bake until golden, 30–35 minutes.
For the toffee sauce
1. Bring the cream, sugar, golden syrup, butter and salt to the boil, whisking until sugar dissolves.
2. Reduce to low heat and keep simmering for 15 minutes.
3. Spoon ½ sauce over pudding. Bake for another 5 minutes.
4. Cool for 30 minutes. Serve with the rest of the sauce.
