These spicy coconut yoghurt and lime-marinated chicken skewers are succulent and full of flavour! Did you know that yoghurt helps moisten chicken?
SERVES 4 ⁄ / PREP TIME 2 hour 15 min// COOK TIME 10 min
INGREDIENTS
1 cup coconut yoghurt
2 tbsp Thai green curry paste
Zest and juice of 1 lime
1 garlic clove, minced
3 cm piece of ginger, finely grated
500 g chicken thighs, de-boned
METHOD
1. Mix together the yoghurt, curry paste, lime zest and juice, garlic and ginger in a mixing bowl.
2. Cut the chicken into smaller pieces and coat well in the marinade.
3. Cover the bowl with cling film and marinate in the fridge for at least 2 hours, ideally overnight.
4. Thread marinated chicken onto skewers and cook in an oiled pan over medium-high heat for 7 minutes or until cooked through.
