Rice Krispies cake

Our guide on how to make rice krispies cake

MAKES 1 / HANDS-ON 45 min / HANDS-OFF 20 min

INGREDIENTS
For the Rice Krispies treats
200g butter
800g marshmallows
500g Rice Krispies
To assemble
500g
icing sugar, sifted
250g butter, room temperature
2 tbsp milk
Sprinkles, to decorate
Smarties, to decorate

METHOD
For the Rice Krispies treats
1. Grease three 20 cm cake tins.
2. Melt ½ butter over medium heat. Add ½ marshmallows. Stir until melted.
3. Remove from heat and add ½ Rice Krispies. Mix well.
4. Begin preparing the second batch. (The mixture sets fast, so work as quickly as possible). Divide between the cake tins and leave to set for 20 minutes.
To assemble
1. Cream sugar, butter and milk together until light and fluffy.
2. Once the Rice Krispies cakes are set, remove from the tins.
3. Ice the tops of the first and second layers and sandwich all 3 cakes together.
4. Use a palette knife to cover the whole cake with icing. Decorate with sprinkles and Smarties.
