With only five ingredients and quick prep, these poached egg, baby marrow, salmon and avo sandwiches are the perfect healthy lunch or dinner choice!

INGREDIENTS
4 eggs
200 g baby marrow, ribboned
4 slices rye bread, toasted
100 g smoked salmon
2 avocados, sliced
Method
1. To poach the eggs, add a dash of vinegar to a pot of water and bring to a simmer. Stir to create a whirlpool. One at a time, crack an egg into a cup, then carefully tip into the whirlpool. Cook for 3 minutes, then remove with a slotted spoon.
2. Drizzle the baby marrow ribbons with a little olive oil and season. Heat a griddle pan and char the ribbons for 30 seconds on each side.
3. Assemble the sandwiches by topping each slice of toast with charred baby marrow, smoked salmon, poached egg and sliced avocado. Season with black pepper and drizzle with olive oil.
