With summer slowly disappearing and autumn making its way here, indulge in the last of summers produce with these delicious low-calorie pineapple margaritas.
MAKES 4 // COOKING TIME 10 min
INGREDIENTS
1 pineapple, cut into chunks
1 litre sparkling water
2 limes, juiced
¼ cup white tequila
To serve
2 cups ice, crushed
1 tsp chilli flakes
1 lime, cut into wedges and rounds
METHOD
1. Reserve a few pieces of pineapple for garnish. Blend the pineapple and strain through a fine sieve.
2. Mix the pineapple juice, sparkling water, lime juice and tequila together.
3. To serve, place ice and lime in glass, add the cocktail and sprinkle over chilli flakes.
