Ostrich mince started gaining popularity as a superfood a few years ago and many people began introducing it into their diets in place of beef mince. It is incredibly lean with little of fat and you can usually find it in most local grocery stores. If it feels like a big jump for you, begin with the packs of the mixed beef and ostrich mince.
SERVES 4 // COOKING TIME 45 min
INGREDIENTS
300g ostrich mince
½ cup couscous
8 dates, pitted and chopped
2 red onions, peeled and chopped
2 cloves garlic, peeled and crushed
1 tbsp olive oil
1 tbsp Worcestershire sauce
2 tsp chopped coriander
1 tsp paprika
Salt and black pepper
4 red peppers
½ × 440g tin chopped tomatoes
METHOD
1. Preheat oven to 160°C.
2. Mix the mince, couscous, dates, onions, garlic, oil, Worcestershire sauce, coriander and paprika. Season.
3. Slice the top off each pepper and remove the ribs and seeds.
4. Pour the chopped tomatoes into an ovenproof dish. Season. Stuff the peppers with the mince mixture and arrange on top. Bake for 35 minutes.
5. Serve warm or at room temperature.
