With warmer days on the way, you can get back into enjoying all the lovely summer fruits. Try these fresh melon muesli breakfast bowls for a nutritious and seasonal brekkie dish that you can whip up in minutes.
SERVES 4 // COOKING TIME 20 min
INGREDIENTS
1 cup oats
4 tbsp honey
2 tbsp sunflower seeds
2 tsp olive oil
1 cup plain yoghurt
1 tsp vanilla essence
1 melon, quartered and seeded
½ cup blueberries
⅓ cup coconut shavings
METHOD
1. Mix oats, honey, seeds and oil. Toast in a pan over medium heat until golden.
2. Mix yoghurt with vanilla essence and spoon into melon quarters. Scatter muesli, blueberries and coconut over to serve.
