INGREDIENTS
1 cup quinoa, cooked as per packet instructions
100g cherry tomatoes, halved
150g fior di latte mozzarella, torn
10–15 basil leaves
2 spring onions, sliced
3 tbsp olive oil
Salt and black pepper
METHOD
1. Mix together the quinoa, tomatoes, mozzarella, basil and spring onions.
2. Add the oil and toss to coat. Season and serve.
