MAKES ¼ cup // COOKING TIME 10 mins
INGREDIENTS
6 cardamom pods, seeds only
2 tbsp cumin seeds
2 tbsp coriander seeds
1 tsp black peppercorns
2 tsp ground turmeric
1 tbsp paprika
2 tsp chilli powder
¼ tsp ground cinnamon
1 tsp flaked salt
4 cloves garlic, peeled and crushed
3 cm ginger, peeled and grated
Juice of 2 lemons
METHOD
1. Using a mortar and pestle, grind the spices and salt to a fine paste.
2. Add the garlic, ginger and lemon juice, and pound well.
3. Rub onto chicken or fish. Allow to marinate for 1–2 hours before cooking.
