Masala chicken gatsby

We are treating you to yet another amazing local-is-lekker recipe to celebrate Heritage Month in style with us. We’re taking this SA street food staple and turning into a gourmet meal. Who’s joining us for a yummy masala chicken gatsby?


For the gatsby
300g frozen potato chips
Vegetable oil, to coat
Salt and pepper
4 chicken breasts, halved
¼ cup masala spice
1 baguette, sliced lengthways
2 heads cos lettuce
For the sauce
1 cup mayonnaise
2 tbsp masala spice
2 tsp vegetable oil

1. Preheat oven 180°C.
2. Toss the chips with a little oil and season with salt and pepper.  Place on a baking tray and bake as per package instructions.
3. Rub the chicken breasts with the masala spice. Heat a little oil and fry for a few minutes on each side until cooked through.
4. Mix all the sauce ingredients.
5. Spread sauce on the baguette. Top with lettuce, chicken and chips. Cut into 4 and serve.
