Hash-brown waffles

Hash browns, meet waffles. Waffles, meet hash browns. Just in case you didn’t know what was for breakfast, here you go…

SERVES 8

INGREDIENTS
2.5 kg potatoes, peeled and grated
Salt and pepper
2 onions, peeled and grated
6 eggs
1 cup sour cream
Butter, melted, for greasing

METHOD
1. Preheat a waffle maker.
2. Season the grated potatoes with salt and let them sit for 10 minutes. Add the grated onions, wrap the mixture in a clean kitchen towel and wring out the excess moisture.
3. Transfer to a large bowl. Mix in the eggs and the sour cream, and season.
4. Brush the hot waffle maker with melted butter, then spread an even layer of the potato mixture across the griddle.
5. Close and cook for 15–20 minutes, until the surface is crispy and brown.
