Greek-inspired veggie pita pizzas

Feta, tomatoes, olives, spinach: All our favourite Mediterranean flavours, deliciously presented on an easy-to-make pita base. Oh, and this meal is healthy and budget-friendly too. Opa!

Serves 4 // Hands-on 10 min // Hands-off 10 min

3 pita breads, split in half
160g cherry tomatoes, quartered
Salt and pepper
120g spinach, stalks removed
100g feta, crumbled
150g Kalamata olives, pitted and halved
2 tsp olive oil

1. Preheat oven to 200°C.
2. Arrange the six pita rounds on a baking tray.
3. Sprinkle the tomatoes over the top of each pita and season. Then, top with spinach, feta and olives, and drizzle with olive oil. Season again.
4. Bake the pizzas in the oven for 10 minutes, or until the feta starts to colour. Slice and serve.
