1. Creamy avo, kale & sesame-seed spread
INGREDIENTS
½ avo
Handful kale, steamed & chopped
1 tbsp crème fraiche
Lemon zest & juice
Tabasco
Sesame seeds
METHOD
Mash everything together. Season. Spread on to Ryvita and top with sesame seeds and extra avo slices.
2. Tuna & cream cheese
INGREDIENTS
½ red onion, chopped
2 tbsp tuna, drained
2 tbsp chopped chives
1 tbsp cream cheese
2 tsp mayo
METHOD
Mix everything together. Season. Spoon on to Ryvita.
3. Cottage cheese, strawberry & balsamic glaze
INGREDIENTS
1 tbsp cottage cheese
Strawberries, thinly sliced
Balsamic glaze
METHOD
Spread cottage cheese on to Ryvita. Top with strawberries and drizzle with balsamic glaze.
4. Ricotta, brinjal & paprika
INGREDIENTS
Brinjal, sliced
Paprika
Ricotta
Lemon juice
METHOD
Drizzle brinjal with oil and season with paprika, salt and pepper. Grill on both sides until charred. Crumble ricotta on to Ryvita. Top with brinjal and lemon juice.
5. Whipped feta, smoked mackerel & crispy chickpeas
INGREDIENTS
¼ cup feta
3 tbsp cream
2 tbsp cream cheese
Smoked mackerel
Chickpeas, roasted until crispy
METHOD
Blend feta, cream and cream cheese. Spread on to Ryvita. Top with smoked mackerel and a few chickpeas.
6. Nut butter, apple & honey
INGREDIENTS
Nut butter (of your choice)
Apple, thinly sliced
Honey
Lemon juice
METHOD
Spread nut butter on to Ryvita and top with apple. Season with salt and pepper and drizzle with a little honey and lemon juice.
