Ginger biscuit and koeksister ice cream sandwiches

Pair the nostalgic flavour of sweet and syrupy koeksisters with spicy ginger biscuits and you have a cracking dessert on your hands. Plus, ice cream! Serve these up and everyone will be begging you for the recipe.

SERVES 4 // COOKING TIME 10 mins

INGREDIENTS
150g koeksisters, roughly chopped
4 scoops vanilla ice cream, softened
8 ginger biscuits

Method
1. Mix together the koeksisters and ice cream in a bowl.
2. On a sheet of cling film, form the mixture into a log shape. Use the cling film to roll it up into a cylinder. Freeze for three to five hours, or until set.
3. Cut the ice cream log into four equal slices and sandwich each one between two ginger biscuits.
