There’s nothing we love more than getting creative with leftovers! Don’t let that giant pot of leftover pasta sit on the stove. Instead, use it for this frittata di pasta for something different.
SERVES 4 // COOKING TIME 30 min
INGREDIENTS
2–3 cups leftover pasta, with or without sauce
2 tbsp olive oil
6 eggs
½ cup grated Cheddar
Salt and black pepper
METHOD
1. Preheat the oven grill.
2. Drain any excess water from the cooked pasta. If the pasta is already mixed with a sauce, use it as is.
3. Heat the oil in a pan and fry the pasta for 3 minutes, to crisp up unsauced pasta or to reduce the pasta sauce.
4. Whisk together eggs, ¼ cup cheese, ½ tsp salt and a pinch of pepper. Pour over pasta (lift the pasta slightly to allow the egg to flow underneath). Cover and cook for 5 minutes.
5. Sprinkle remaining cheese over the frittata. Place under the grill for 3 minutes, or until golden on top.
