Wok Your Way is one of Cape Town’s hottest food trucks serving up some amazing gourmet street food. They were kind enough to share their sweet-and-sour chicken recipe with us so everyone in SA can enjoy it.
SERVES 4 // COOKING TIME 30 min
INGREDIENTS
50 ml vegetable oil
1 tbsp peeled, chopped garlic
1 tbsp peeled, grated ginger
300g chicken breasts, cut into small pieces
50 ml soy sauce
150g pineapple, diced
100g cashews
200g cabbage, shredded
150g carrots, grated
100g broccoli, cut into small florets
25g cherry tomatoes, halved
¼ green pepper, diced
1 onion, peeled and finely diced
3 eggs
400g jasmine rice, cooked
150 ml sweet-and-sour sauce
METHOD
1. Heat oil in a wok and fry the garlic, ginger and chicken. Cook until chicken is just done, about 10 minutes.
2. Add the soy sauce and stir once. Add pineapple, cashews and all of the vegetables. Cook until veg is hot but still crunchy.
3. Add eggs and mix everything together. Add rice and sweet-and-sour sauce. Cook until heated through and the eggs are done to your liking.
