This Asian-inspired steak salad is packed full of wholesome ingredients. Who said you can’t enjoy a steak dinner and be healthy too?
SERVES 4 // COOKING TIME 25–30 min
INGREDIENTS
400g steak
3 tbsp olive oil
2 tbsp soy sauce
2 tbsp sesame seeds, plus extra to garnish
1 tbsp honey
Juice of 1 lemon or lime, plus wedges to serve
½ tbsp tahini or nut butter
1 baby gem lettuce
1 avocado, sliced
½ cucumber, sliced into batons
½ red onion, finely chopped
Coriander, to garnish
METHOD
1. Bash the steak with a rolling pin or meat tenderiser and place in a bowl. Add 2 tbsp oil, the soy sauce, sesame seeds, honey and lemon or lime juice. Toss to coat, then leave to marinate for 10–15 minutes.
2. Heat the remaining oil in a pan over high heat and fry the steak for a few minutes on each side until cooked to your preference. Remove and set aside.
3. Add the marinade and tahini or nut butter to the pan with the cooking juices, and cook for a few minutes.
4. Slice the steak into strips and toss it in the sauce. Place the lettuce on a plate and top with the steak, avocado, cucumber and red onion. Pour over any extra sauce. Garnish with coriander and sesame seeds. Serve immediately with lime wedges.
