SERVES 6–8 // COOKING TIME 30 min, plus overnight freezing
INGREDIENTS
1 cup raw, unsalted cashews
410 ml tin coconut milk
2 chai teabags
3 tbsp honey or sugar
1 tsp cinnamon
METHOD
1. Cover cashews with boiling water and soak overnight. Drain.
2. Bring the coconut milk, tea, honey/sugar and cinnamon to the boil. Turn off the heat and steep for 10 minutes. Remove the teabags.
3. Blitz cashews and ½ coconut-milk mixture until smooth. Add the rest of the mixture and blend.4. Freeze overnight.
