Give the humble mielie a Mexican makeover with our corn salsa! Serve it up as a snack or side dish the next time you have friends over.
SERVES 4 // COOKING TIME 10 mins
4 mielies, braaied or boiled
4 spring onions, sliced
3 tomatoes, chopped
½ cup chopped coriander
1 red chilli, seeded and finely sliced
Juice of 2 limes, plus wedges to serve
1 tbsp olive oil
Salt and pepper
Tortilla chips, to serve
1. Cut the mielie kernels off the cobs and place in a bowl. Add the spring onions, tomatoes, coriander and chilli and stir to mix.
2. Dress with lime juice and olive oil, season and mix again.
3. Serve with tortilla chips and lime wedges.
