Champers and apple granita

Had a long week? Celebrate today with a fruity, summery champers and apple granita. Happy Friday!

2 cups sugar
Juice of 1 lemon
2 cups fresh apple juice
Sparkling wine, to serve

1. Place the sugar and 2 cups of water in a heavy-based pot over medium heat. Stir until the sugar has dissolved, then simmer for 5 minutes. Remove from the heat and allow to cool slightly.
2. Add the apple juice, then pour the mixture into a baking tray and place in the freezer for a minimum of 3 hours.
3. Remove the frozen mixture from the freezer and use a fork to scratch at it until it breaks into crystals. Place the crystals in Champagne flutes and pour sparkling wine over to serve.
