Forget custard, these berry cannoli doughnuts take dessert treats to the next level with a soft, creamy center and fresh berries.
SERVES 12 // COOKING TIME 30 min
INGREDIENTS
3 cups cream, chilled
3 cups mascarpone, chilled
3 × 90 g pack vanilla instant pudding
1½ cups chocolate chips
12 plain ring doughnuts
Berries, to serve
Icing sugar, to dust
METHOD
1. Beat together the cream, mascarpone and pudding until stiff peaks form, about 3 minutes.
2. Fold in the chocolate chips and scoop the mixture into a piping bag.
3. Slice each doughnut in half. Pipe the mascarpone mixture on to the bottom half. Top with berries and sandwich with the other half.
4. Dust doughnuts with icing sugar and serve.
